  • ½cupbeans,or lentils, cooked
  • ½cupfresh mint,or cilantro, or Italian parsley leaves
  • 1lemon juice
  • 1large egg
  • 1garlic clove
  • 1cupextra virgin olive oil
  • salt and pepper,to taste


  1. Combine the beans, herbs, lemon juice, egg, garlic, and oil in a food processor and blend until smooth for about 1 minute.

  2. With the machine running, pour in the remaining oil through the feed tube in a thin, steady stream and to make a creamy and smooth sauce.

  3. Stop the machine and scrape the sides. Taste the sauce and season with salt and pepper.

  4. Serve and enjoy!
