Ingredients

  • 2 large eggplants
  • 3 tablespoons tahini
  • 2 cloves of garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Optional toppings: chopped parsley, paprika, extra olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Prick the eggplants with a fork and place them on a baking sheet. Bake for 40 minutes, or until the skin is charred and the flesh is soft.

  3. Remove the eggplants from the oven and let them cool. Once cooled, peel off the skin and discard.

  4. In a food processor or blender, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and salt. Blend until smooth.

  5. Transfer the mixture to a serving bowl and garnish with optional toppings if desired.

  6. Serve with pita bread, vegetables, or chips for dipping.
