  • 1 bunch kale, stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant.

  2. Add the carrots, celery, and potato to the pot. Cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the vegetables are tender.

  4. Stir in the kale, dried thyme, and dried oregano. Cook for an additional 5 minutes until the kale is wilted.
