  • 1.5 lbs beef shank, cut into chunks
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, quartered
  • 1 medium radish, peeled and sliced
  • 1 medium eggplant, sliced
  • 1 bunch kangkong (water spinach), ends trimmed
  • 8 cups water
  • 3 tablespoons tamarind soup base mix
  • 2 tablespoons fish sauce
  • 2 long green chili peppers
  • Salt and pepper, to taste


  1. In a large pot, bring water to a boil over medium heat. Add the beef shank and simmer for 1.5 hours or until the beef is tender.

  2. Add the onions, garlic, and tomatoes to the pot. Stir and cook for 5 minutes.

  3. Dissolve the tamarind soup base mix in a cup of water and pour it into the pot. Add the fish sauce and stir well.

  4. Add the radish and eggplant to the pot and simmer for another 5 minutes or until they are partially cooked.

  5. Stir in the kangkong and chili peppers. Cook for an additional 2 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot with steamed rice.
