Ingredients

  • 2 pounds of chicken bones
  • 1 carrot, chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 10 cups of water
  • 1 bay leaf
  • 1 teaspoon of whole black peppercorns
  • Salt, to taste

Instructions

  1. In a large pot, add the chicken bones, carrot, onion, celery, garlic, water, bay leaf, peppercorns, and salt.

  2. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 2 hours.

  3. After 2 hours, strain the stock through a fine mesh sieve into a clean pot.

  4. Discard the solids and skim off any excess fat from the top of the stock.

  5. Use the white stock immediately or let it cool and store it in the refrigerator for up to 3 days.
