Ingredients

  • 1 lb mixed shellfish (shrimp, mussels, clams, scallops)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup diced tomatoes
  • 4 cups fish or vegetable broth
  • 1/2 cup white wine
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until onion is translucent.

  2. Add the mixed shellfish to the pot and sauté for a few minutes until they start to turn pink.

  3. Stir in diced tomatoes, fish or vegetable broth, white wine, dried thyme, and paprika. Season with salt and pepper.

  4. Bring the soup to a boil, then reduce heat and let it simmer for about 20 minutes to allow the flavors to meld together.

  5. Serve the shellfish soup hot, garnished with fresh parsley.
