  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can red enchilada sauce
  • 2 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup frozen corn
  • 1 cup black beans, rinsed and drained
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

  2. Stir in the ground cumin and chili powder, and cook for an additional 1 minute.

  3. Add the diced tomatoes, enchilada sauce, and chicken broth to the pot. Bring to a simmer.

  4. Stir in the shredded chicken, frozen corn, and black beans. Season with salt and pepper to taste.

  5. Simmer for about 15 minutes to allow the flavors to meld together.

  6. Serve hot, and garnish with your choice of shredded cheese, sour cream, diced avocado, and chopped cilantro.
