  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 can (14 ounces) diced tomatoes
  • 2 cups kale, chopped
  • 2 cups cabbage, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste


  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the vegetable broth, water, diced tomatoes, kale, cabbage, thyme, paprika, salt, and pepper. Stir well to combine.
