  • 2 medium courgettes, sliced
  • 2 leeks, sliced
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 4 oz goat’s cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the garlic and cook for 1 minute.

  2. Add the sliced courgettes and leeks to the pot and cook for 5 minutes, until they start to soften.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, until the vegetables are tender.

  4. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  5. Crumble the goat’s cheese into the soup and stir until melted and incorporated.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
