  • 1 lb mixed seafood (shrimp, clams, mussels, fish)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 2 tomatoes, diced
  • 4 cups seafood broth
  • 1 cup white wine
  • 1 bay leaf
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook until vegetables are soft.

  2. Add the tomatoes, seafood broth, white wine, bay leaf, paprika, and dried thyme. Simmer for 10 minutes.

  3. Add the mixed seafood to the pot and cook until they are cooked through, about 5-7 minutes.

  4. Season with salt and pepper to taste.

  5. Serve the soup hot, garnished with fresh parsley.
