Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 onions, diced
  • 4 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, diced
  • 1 Scotch bonnet pepper, seeded and diced
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • Juice of 2 limes
  • 1 cup water
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the chicken pieces, onions, garlic, carrots, celery, potatoes, Scotch bonnet pepper, bay leaves, thyme leaves, lime juice, and water.

  2. Season with salt and pepper to taste and bring to a boil.

  3. Reduce heat and let simmer for 1 hour or until the chicken is cooked through and tender.

  4. Remove the bay leaves and Scotch bonnet pepper before serving.

  5. Serve hot with a side of white rice or Johnny cake.
