Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté until fragrant.

  2. Add the diced carrots, potatoes, and sliced cabbage to the pot. Stir to combine with the onions and garlic.

  3. Pour in the vegetable broth and add the dried thyme. Season with salt and pepper to taste.
