How To Make Tuscan Bean Soup

The perfect soup for the rainy days is here. Grab some veggies, some basil, some chicken broth, and have a deliciously filling soup!

  • 1-5½ oz large yellow onion (chopped)
  • 3 tsp olive oil
  • 1 garlic clove (chopped)
  • 2½ oz carrots (chopped)
  • 2½ oz celery (chopped)
  • salt and pepper (to taste)
  • 2 cups vegetable broth
  • 2 cups chicken broth
  • ¼ cup white wine
  • 1 cup kale or collards (chopped)
  • 2-15 oz cans white cannellini beans (drained and rinsed)
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tbsp warmed heavy cream

To serve:

  • ¼ cup pangritata
  • Parmesan cheese
  • Marinara sauce
  1. Heat the olive oil in a large pot then add the onion. Saute the onion and cook until it caramelizes.
  2. Add the garlic, carrot, and celery. Saute briefly
  3. Deglaze with white wine & reduce briefly
  4. Add both broths and bring to boil.
  5. Reduce heat to medium low and add in the beans, basil, and kale. Simmer for about 20 minutes. Afterward, stir in the warmed cream.
  6. Once you’re done cooking, serve your Tuscan bean soup with the accompaniments

Ingredients

  • salt and pepper , to taste

  • Croutons, roughly 3 pieces per per serving
