Ingredients

  • 1turkey carcass,from 14 lbs
  • 8cupschicken broth
  • 12ozmedium egg noodles
  • 1yellow onion,chopped
  • 4celery stalks,thinly sliced
  • 2medium carrots,thinly sliced
  • 1bay leaf
  • 1tspkosher salt
  • ½tspcoarse ground black pepper
  • ½tsprosemary
  • ½tspthyme
  • 2cupsturkey meat,chopped

Instructions

  1. Add the turkey carcass and broth to a large dutch oven. Bring to a boil, then reduce to a simmer. Cover and cook for about 30 minutes.

  2. Remove the bones from the pot, then add in all the remaining ingredients. Bring to a simmer, then cover and cook for about 12 minutes until noodles are cooked.
