Ingredients

  • cooking spray
  • 1 cup carrot , slices
  • ¾ cup onion, chopped
  • 4 garlic cloves, minced
  • 1 cup celery , slices
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • 6 cups fat-free less-sodium chicken broth
  • 2 cups egg noodles, uncooked
  • 1 tbsp low-sodium soy sauce
  • 1 bay leaf
  • 2 cups turkey, shredded
  • coarsely ground black pepper, optional

Instructions

  1. Heat a large saucepan over medium-high heat.
  2. Coat pan with cooking spray.
  3. Add carrot, onion, and garlic; sauté 5 minutes or until onion is lightly browned.
  4. Add celery, salt, and ¼ teaspoon pepper; sauté 3 minutes.

  5. Add broth and next 3 ingredients (through bay leaf); bring to a boil.
  6. Reduce heat, and simmer 5 minutes.
  7. Add shredded turkey; cook 3 minutes.
  8. Discard bay leaf.
  9. Sprinkle with coarsely ground black pepper, if desired.
