  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 3 cups chopped kale
  • 2 cups diced potatoes
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese for topping

Instructions

  1. In a large pot or dutch oven, cook the Italian sausage over medium heat until browned. Remove the sausage from the pot and set aside.

  2. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.

  3. Add the chicken broth, chopped kale, and diced potatoes to the pot. Bring to a simmer and cook until the potatoes are fork-tender, about 10-15 minutes.

  4. Meanwhile, slice the cooked Italian sausage into bite-sized pieces.

  5. Once the potatoes are cooked, add the sliced sausage back to the pot and stir in the heavy cream.

  6. Season with salt and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld together.

  7. Serve the Toscana Soup hot, topped with grated Parmesan cheese.
