Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cans (28 oz each) whole peeled tomatoes
  • 1 cup vegetable broth
  • 1/4 cup tomato paste
  • 1 tsp sugar
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

  2. Add the canned tomatoes (including juice) to the pot and break them up with the back of a spoon. Cook for a few minutes to allow the flavors to meld.

  3. Stir in the vegetable broth, tomato paste, and sugar. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, until the flavors are well combined.

  4. Using an immersion blender or regular blender, puree the soup until smooth and creamy. Return the soup to the pot.

  5. Stir in the heavy cream and season with salt and pepper to taste. Heat the soup over low heat until warmed through.

  6. Serve the tomato bisque hot, garnished with a sprig of fresh basil or a dollop of sour cream if desired.
