  • 2 chicken breasts, sliced
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 1 stalk lemongrass, bruised
  • 3 slices galangal or ginger
  • 2 kaffir lime leaves
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1/2 cup mushrooms, sliced
  • 1/2 cup cherry tomatoes, halved
  • 2 fresh Thai chilies, sliced (optional)
  • Fresh cilantro, for garnish

Instructions

  1. In a pot, bring the chicken broth to a simmer. Add the lemongrass, galangal or ginger, and kaffir lime leaves. Simmer for 10 minutes.

  2. Add the sliced chicken breasts and mushrooms to the pot. Cook until the chicken is cooked through, about 10-15 minutes.

  3. Stir in the coconut milk, fish sauce, lime juice, sugar, cherry tomatoes, and Thai chilies (if using). Simmer for another 5 minutes.

  4. Remove the lemongrass, galangal or ginger, and kaffir lime leaves from the pot. Serve the soup hot, garnished with fresh cilantro.
