  • 400ml coconut milk
  • 500ml chicken or vegetable broth
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 5 slices galangal
  • 200g mushrooms, sliced
  • 2 tomatoes, cut into wedges
  • 2 chicken breasts, sliced (optional)
  • 4 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • Fresh coriander, for garnish
  • Thai chili peppers, sliced (optional)

Instructions

  1. In a pot, bring the coconut milk and broth to a boil.

  2. Add the lemongrass, kaffir lime leaves, and galangal. Simmer for 5 minutes.

  3. Add the mushrooms, tomatoes, and chicken (if using). Cook until the chicken is cooked through.

  4. Stir in the fish sauce, lime juice, and sugar. Remove from heat.

  5. Serve hot, garnished with fresh coriander and Thai chili peppers (if desired).
