Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 bunch kale, stems removed and leaves chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
- Optional toppings: grated Parmesan cheese, toasted pumpkin seeds
Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant.

Add the diced sweet potatoes and kale to the pot. Pour in the vegetable broth and sprinkle with thyme.

Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until sweet potatoes are tender.

Use an immersion blender or transfer small batches to a blender to puree the soup until creamy. Season with salt and pepper.
