  • 1 large cabbage
  • 1 lb ground beef
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups diced tomatoes
  • 4 cups beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Core the cabbage and carefully remove individual leaves. Blanch the leaves in boiling water for 2-3 minutes until softened. Remove and set aside.

  2. In a large bowl, combine the ground beef, rice, onion, garlic, paprika, thyme, salt, and pepper. Mix well.

  3. Take a cabbage leaf and place a spoonful of the ground beef mixture in the center. Roll it up tightly, tucking in the sides. Repeat with the remaining leaves and filling.

  4. In a large pot, heat some oil over medium heat. Add the diced tomatoes and cook for 5 minutes. Add the beef broth and bring to a simmer.

  5. Carefully place the stuffed cabbage rolls into the pot, cover, and simmer for 45 minutes to 1 hour, until the cabbage is tender and the filling is cooked through.

  6. Serve the stuffed cabbage soup hot, garnished with chopped fresh parsley.
