Ingredients

  • 7cupspotatoes,diced
  • 1medium onion,diced
  • 1large carrot,chopped
  • 2cupsham,diced
  • 2cupschicken,cooked & diced
  • 2tspparsley
  • ½tspthyme leaves
  • 2tspdijon mustard
  • 5cupschicken broth
  • 1cupcream
  • 2cupsmozzarella cheese,shredded
  • pepper,to taste

Instructions

  1. In a large pot, combine diced potatoes, onion, carrot, chicken, ham, thyme, parsley, pepper, dijon and broth.

  2. Bring to a boil and simmer for 20 minutes or until potatoes are soft.

  3. Remove 2 to 3 cups of the potatoes or carrots and transfer to a bowl.

  4. Mash and put back the mixture to the pot.

  5. Add cream, stir and cook for an additional 5 minutes. Stir in shredded cheese until melted. Serve hot.
