  • 2 large sweet potatoes, peeled and diced

  • 1/2 tsp of cayenne pepper
  • 4 cups of vegetable broth
  • 1/2 cup of coconut milk
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and cook until they become translucent.

  3. Add the diced sweet potatoes, curry powder, and cayenne pepper to the pot. Stir well to coat the sweet potatoes with the spices.
