  • 8 oz rice noodles
  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1 tsp red curry paste
  • 1 can (13.5 oz) coconut milk
  • 4 cups vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic. Cook until fragrant and translucent.

  3. Add the red bell pepper, carrot, and zucchini to the pot. Cook for 5 minutes, until slightly softened.

  4. Stir in the red curry paste and cook for another minute.

  5. Pour in the coconut milk and vegetable broth. Bring to a simmer.

  6. Add the cooked rice noodles to the pot. Stir in the soy sauce and lime juice. Season with salt and pepper to taste.

  7. Simmer for another 5-10 minutes, until all the flavors are well combined.

  8. Serve the spicy coconut noodle soup hot, garnished with fresh cilantro and lime wedges.
