- 1 lb boneless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons Thai red curry paste
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 tablespoons fish sauce
- Juice of 2 limes
- 1 tablespoon brown sugar
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- Fresh cilantro and lime wedges, for garnish

Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook for 2-3 minutes until fragrant.
