  • 1 lb boneless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons Thai red curry paste
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons fish sauce
  • Juice of 2 limes
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • Fresh cilantro and lime wedges, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger. Cook for 2-3 minutes until fragrant.

  2. Add the chicken slices and cook until browned, about 5 minutes.

  3. Stir in the Thai red curry paste and cook for another minute.

  4. Pour in the chicken broth and coconut milk. Bring to a simmer.

  5. Add the fish sauce, lime juice, and brown sugar. Season with salt and pepper to taste.

  6. Add the red bell pepper, broccoli, and mushrooms. Cook for 10-12 minutes until the vegetables are tender.

  7. Serve the spicy chicken Thai soup hot, garnished with fresh cilantro and lime wedges.
