Ingredients

  • 1 lb lamb shoulder, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 4 cups beef broth
  • 1 cup water
  • 1 cup pearl barley
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the lamb and cook until browned on all sides. Remove from the pot and set aside.

  2. In the same pot, add the onion, carrots, celery, and garlic. Sauté until softened.

  3. Return the lamb to the pot and add the thyme, bay leaf, beef broth, water, and barley. Season with salt and pepper.

  4. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the lamb is tender and the flavors have melded together.

  5. Serve hot, garnished with fresh parsley.
