Whenever there is a party and a spiral ham is served my family demands I make this split pea soup. I freeze individual portions with leftovers so that anyone can have some any time they like. Do not add pasta to portions you are going to freeze.


Go vegan with this split pea soup recipe made flavorful with vegetable broth and spices.

Ingredients

  • 1 bag dry split peas, any color
  • ¼ cup fresh carrots
  • ¼ cup instant potato flakes , or any other cookie potato, if potato is raw, peel and cube
  • 4 cups water
  • 1 cup vegetable broth
  • pinch black pepper
  • 1 cup tender sweet peas juice
  • ½ cup cooked rice , or small pasta
  • cheese, grated

Instructions

  1. Rinse and soak dry peas in hot water for about 20 minutes.
  2. Look for any rocks or dirt.
  3. Combine all ingredients - except rice or pasta - in large pot.
  4. Cover and bring to a boil.
  5. If using real potato, add now, otherwise wait for the last 5 minutes.
  6. Simmer and cook for about 35-40 minutes half covered, stirring every 15 minutes.
  7. Use a blender or an immersion blender to combine all ingredients.

  8. Add cooked rice or pasta and sprinkle with grated cheese to taste.
