
How To Make Rich Broccoli Cheese Soup (Panera Copycat)
Rich and creamy, this copycat recipe brings Panera’s broccoli cheese soup to your kitchen! Broccoli and carrots are simmered in a thick cream sauce.

Ingredients
- ½medium onion,chopped
- ¼cupbutter,melted, plus 1 tbsp more for sauteing
- ¼cupflour
- 2cupshalf and half cream
- 2cupschicken stock
- ½lbfresh broccoli,(about 1 cup)
- 1cupcarrot,julienned
- ¼tspnutmeg
- 8ozsharp cheddar cheese,grated
- salt and pepper,to taste
Instructions

Sauté the onion in 1 tablespoon of melted butter and set aside. In a large pot whisk together the remaining melted butter and flour over medium heat for about 3 to 4 minutes.

Slowly whisk in the half and half and chicken stock. Let it simmer for about 20 minutes.

Add the broccoli, carrots, and onions. Let them simmer on medium low for about 25 minutes until the broccoli and carrots are tender.

Add nutmeg, salt and pepper and sharp cheddar cheese.
