Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, diced (optional for spicier chilli)
  • 1 lb ground beef
  • 2 tbsp chilli powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional for spicier chilli)
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • Salt and black pepper, to taste
  • For Creamy Chive Crushed Potatoes:
  • 4 large potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup milk
  • 2 tbsp chives, chopped
  • Salt and black pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and peppers, and sauté until softened, about 5 minutes.

  2. Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks.

  3. Stir in the chilli powder, cumin, paprika, and cayenne pepper (if using). Cook for another 2 minutes to toast the spices.

  4. Add the diced tomatoes, kidney beans, and beef broth to the pot. Season with salt and black pepper, to taste. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

  5. While the chilli is simmering, cook the potatoes in a large pot of salted water until tender, about 15 minutes. Drain the potatoes and return them to the pot.

  6. Add the butter and milk to the potatoes and mash until creamy. Stir in the chopped chives and season with salt and black pepper, to taste.

  7. Serve the hot chilli over the creamy chive crushed potatoes.
