This cabbage soup cooks in 30 minutes, making it a quick and easy meal option. It also has carrots and tomatoes for a pop of flavor and color.

  • ½onion,diced
  • 2tspolive oil
  • 6cupscabbage,diced ½ inches
  • 1carrot,shredded
  • 14ozdiced tomatoes,with juice
  • 1bay leaf
  • 1tspItalian Seasoning
  • 1tbsptomato paste
  • 6cupsbeef broth,or chicken broth
  • 1tbspparsley,fresh


  1. Cook onion in olive oil for 3 to 4 minutes or until tender.

  2. While onion is cooking, dice cabbage. Add cabbage to the pot and cook over medium heat for about 8 minutes or until it starts to soften.

  3. While cabbage is cooking, prepare other ingredients. Add all ingredients to the pot, bring to a boil and simmer uncovered for 15 minutes or until cabbage is tender.

  4. Discard bay leaf, season with salt and pepper to taste, and serve.
