Ingredients

  • 8 oz pasta
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.

  3. Add the diced tomatoes, cannellini beans, vegetable broth, oregano, and basil to the pot. Season with salt and pepper. Bring to a simmer and let cook for 15 minutes.

  4. Add the cooked pasta to the pot and stir to combine. Cook for an additional 5 minutes to heat through.

  5. Serve the Pasta Fazul hot, topped with grated Parmesan cheese.
