  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

  2. Sprinkle the flour over the onion and garlic mixture, stirring well to form a roux. Cook for 2-3 minutes, until golden brown.

  3. Slowly whisk in the milk, ensuring there are no lumps. Bring the mixture to a simmer, stirring constantly.

  4. Add the shucked oysters, along with their juices, to the pot. Cook for 5-7 minutes, until the edges of the oysters start to curl.

  5. Season with salt and pepper, adjusting to taste.

  6. Serve the oyster stew hot, garnished with a sprinkle of fresh parsley.
