  • 1 cup mixed beans, soaked overnight
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can diced tomatoes
  • 1 tsp cumin powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat some oil and sauté the onion and garlic until fragrant.

  2. Add the red bell pepper, carrot, and celery. Cook for 5 minutes until they start to soften.

  3. Drain the soaked beans and add them to the pot. Stir well.

  4. Add the diced tomatoes, cumin powder, paprika, salt, and pepper. Mix everything together.

  5. Pour in the vegetable broth and bring the mixture to a boil.

  6. Reduce the heat, cover the pot, and let it simmer for 40 minutes or until the beans are tender.

  7. Serve the mixed beans hot, garnished with chopped parsley.
