  • 8 cups of chicken or beef broth
  • 1 lb of boneless chicken breast or beef, sliced thinly
  • 4 oz of rice noodles or egg noodles
  • 1 cup of sliced carrots
  • 1 cup of sliced bok choy
  • 1 cup of sliced mushrooms
  • 2 cloves of garlic, minced
  • 1 tbsp of soy sauce
  • 1 tsp of sesame oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, bring the chicken or beef broth to a boil.

  2. Add the sliced chicken or beef and cook until cooked through, about 5-7 minutes.

  3. Remove the cooked chicken or beef from the pot and set aside.

  4. In the same pot, add the rice noodles and cook according to package instructions.

  5. Once the noodles are cooked, add the sliced carrots, bok choy, mushrooms, and minced garlic to the pot.

  6. Cook for another 5 minutes or until the vegetables are tender.

  7. Return the cooked chicken or beef to the pot.

  8. Stir in the soy sauce, sesame oil, and season with salt and pepper.

  9. Serve the soup hot, garnished with fresh cilantro and lime wedges.
