How To Make Kielbasa with Roasted Pepper Soup

This simple and comforting roasted pepper soup comes with sauteed sausage and vegetables simmered in a thyme-seasoned broth.

  • 1tspolive oil
  • ¼lbkielbasa,cooked
  • 1large onion
  • cupchicken stock
  • 1large potato
  • 1celery stalk
  • 1tspwhite wine vinegar
  • ½tspdried thyme leaves
  • ¼tsplemon pepper
  • salt,to taste
  • ¼cuproasted red peppers,diced, for garnish


  1. Heat the oil in a 6-quart pot over medium-high heat for 1 minute. Add the kielbasa and onion and sauté for about 6 minutes until the onion begins to brown.

  2. Add the stock, potato, celery, vinegar, thyme, and lemon pepper. Cover and bring to a boil.

  3. Reduce the heat and simmer for about 15 minutes until the vegetables are tender. Taste and season with salt if needed.

  4. Top each serving with red peppers, serve, and enjoy!
