How To Make Kielbasa with Roasted Pepper Soup
This simple and comforting roasted pepper soup comes with sauteed sausage and vegetables simmered in a thyme-seasoned broth.

Ingredients
- 1tspolive oil
- ¼lbkielbasa,cooked
- 1large onion
- 3½cupchicken stock
- 1large potato
- 1celery stalk
- 1tspwhite wine vinegar
- ½tspdried thyme leaves
- ¼tsplemon pepper
- salt,to taste
- ¼cuproasted red peppers,diced, for garnish
Instructions

Heat the oil in a 6-quart pot over medium-high heat for 1 minute. Add the kielbasa and onion and sauté for about 6 minutes until the onion begins to brown.

Add the stock, potato, celery, vinegar, thyme, and lemon pepper. Cover and bring to a boil.

Reduce the heat and simmer for about 15 minutes until the vegetables are tender. Taste and season with salt if needed.

Top each serving with red peppers, serve, and enjoy!
