  • 1lbItalian sausage,or ground beef
  • 1onion,diced
  • tspItalian seasoning
  • ½tspgarlic powder
  • 1carrot,chopped
  • 3cupsbeef broth,or chicken broth
  • 15ozcanned diced tomatoes,with juices
  • 15ozcanned white beans,drained and rinsed
  • 2tbsptomato paste
  • 1bay leaf


  1. Brown sausage and onion in a large pot until no pink remains. Drain any fat.

  2. Add remaining ingredients and bring to a boil. Reduce heat and simmer 15 minutes or until carrot is tender and flavors have blended.

  3. Discard bay leaf and serve.

  4. Garnish with parmesan cheese and parsley if desired.
