  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Select “Saute” mode on the Instant Pot and heat some oil. Add the chopped onion and garlic, saute until fragrant.

  2. Add the asparagus and cook for 2-3 minutes until slightly tender.

  3. Pour in the vegetable broth and season with salt and pepper.

  4. Close the Instant Pot lid and set the valve to “Sealing” position. Select “Manual” mode and set the timer for 5 minutes.

  5. Once the timer goes off, let the pressure release naturally for 10 minutes. Then, do a quick release.

  6. Use an immersion blender to puree the soup until smooth.

  7. Stir in the heavy cream and adjust the seasoning if needed.

  8. Serve hot, garnished with chopped fresh parsley.
