  • 1.5 lbs boneless, skinless chicken breasts, cut into cubes
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 1 cup egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Press the “Saute” button on the Instant Pot and heat some oil. Add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook for 3-4 minutes until the vegetables are slightly softened.

  2. Add the cubed chicken, chicken broth, dried thyme, dried rosemary, salt, and pepper to the Instant Pot. Stir well to combine.

  3. Secure the lid on the Instant Pot and set the valve to the sealing position. Cook on high pressure for 10 minutes.

  4. Once the cooking time is complete, do a quick release of the pressure. Carefully remove the lid and add the egg noodles to the pot.

  5. Press the “Saute” button again and cook the soup for an additional 5-6 minutes until the noodles are cooked through.

  6. Serve hot, garnished with fresh parsley.
