How To Make Homemade Alphabet Vegetable Soup

Ingredients
- 1tbspolive oil
- 3clovesgarlic,minced
- 1cupyellow onion,(½ large) chopped
- 1tbspItalian seasoning
- ¾tspsalt
- ¾tspdried thyme
- ¼tspfresh ground black pepper
- 8cupsvegetable broth,beef or chicken
- 4cupsvegetables,frozen, canned, or fresh
- 1medium potato,heaping cup, peeled and chopped
- 1bayleaf
- 6oztomato paste,(1 can)
- 14oztomatoes,(1 can) do not drain, diced
- 1cupdry alphabet pasta
Instructions

Heat the olive oil over medium heat in a 20 cups (or larger) pot or dutch oven. Add the garlic, onion, Italian seasoning, salt, thyme, and pepper. Stir and cook for 5 minutes as the onion softens.

Add broth, vegetables, potato, bay leaf, tomato paste, and diced tomatoes. Bring to a boil, then add uncooked pasta. Cover and simmer for 30 minutes. Remove bay leaf.

Serve soup warm and top with fresh parmesan cheese, if desired. Enjoy.
