  • 1tbspolive oil
  • 3clovesgarlic,minced
  • 1cupyellow onion,(½ large) chopped
  • 1tbspItalian seasoning
  • ¾tspsalt
  • ¾tspdried thyme
  • ¼tspfresh ground black pepper
  • 8cupsvegetable broth,beef or chicken
  • 4cupsvegetables,frozen, canned, or fresh
  • 1medium potato,heaping cup, peeled and chopped
  • 1bayleaf
  • 6oztomato paste,(1 can)
  • 14oztomatoes,(1 can) do not drain, diced
  • 1cupdry alphabet pasta


  1. Heat the olive oil over medium heat in a 20 cups (or larger) pot or dutch oven. Add the garlic, onion, Italian seasoning, salt, thyme, and pepper. Stir and cook for 5 minutes as the onion softens.

  2. Add broth, vegetables, potato, bay leaf, tomato paste, and diced tomatoes. Bring to a boil, then add uncooked pasta. Cover and simmer for 30 minutes. Remove bay leaf.

  3. Serve soup warm and top with fresh parmesan cheese, if desired. Enjoy.
