Hearty Meatball and Tortellini Soup Recipe

How To Make Hearty Meatball and Tortellini Soup

Italian-style soup made easy using 3-cheese tortellinis and savory seasoned meatballs.

  • 1 lb mini meatballs (frozen )
  • 8 oz 3-cheese tortellini
  • 2 cup tomatoes (chopped and undrained)
  • 4 cup chicken stock (low sodium)
  • ½ cup onion (chopped)
  • ½ cup sweet bell pepper ((red, green and yellow), chopped)
  • 1 cup celery (chopped)
  • 3 cloves garlic (chopped)
  • 2 cup zucchini (diced)
  • 1 tbsp fresh basil (chopped)
  • 1 tbsp fresh oregano (chopped)
  • ½ cup Italian parsley (chopped)
  • 2 tsp season salt
  • 2 tbsp parmesan (grated )
  1. Place all ingredients except meatballs, tortellini and Parmesan, in a large pot.
  2. On high heat, bring to boil, about 10 minutes.
  3. Add tortellini and meatballs and turn heat down to medium and simmer for about 10-12 minutes or until pasta and veggies are tender.
  4. Take off heat.
  5. Gently stir in 2 tbsp. parmesan cheese.
  6. Serve garnished with slices of pepperoni and fresh grated Parmesan cheese, and garlic bread.
