  • 1 lb ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1 cup chopped spinach
  • Salt and pepper to taste
  • Shredded Parmesan cheese for topping


  1. In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, parsley, onion, garlic, dried basil, and dried oregano. Mix well to combine.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the pot and set aside.

  4. In the same pot, add the beef broth, diced tomatoes, carrots, zucchini, and spinach. Bring to a boil, then reduce heat and simmer for 15 minutes.

  5. Return the meatballs to the pot and simmer for an additional 10 minutes, or until the meatballs are cooked through.

  6. Season with salt and pepper to taste. Serve hot, topped with shredded Parmesan cheese.
