- 1 lb ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 4 cups beef broth
- 1 cup diced tomatoes
- 1 cup diced carrots
- 1 cup diced zucchini
- 1 cup chopped spinach
- Salt and pepper to taste
- Shredded Parmesan cheese for topping

In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, parsley, onion, garlic, dried basil, and dried oregano. Mix well to combine.

Shape the mixture into small meatballs, about 1 inch in diameter.

In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the pot and set aside.

In the same pot, add the beef broth, diced tomatoes, carrots, zucchini, and spinach. Bring to a boil, then reduce heat and simmer for 15 minutes.
