
How To Make Gazpacho Soup
This gazpacho soup is a Spanish specialty that brims with the refreshing flavors of cucumber, tomatoes, and cilantro pureed into a light and smooth dish.

Ingredients
- 2tomatoes
- ½cucumber
- ¼onion
- ½green pepper
- ½cupcilantro
- 1tbspolive oil
- ½tspsalt
- pepper
- ¼tbspvinegar,optional
- ¼tspsugar,optional
Instructions

Prepare the green pepper for chopping by first halving it by cutting it from stem to end. Then use one hand to pull out the seeds, the white membrane, and the stem. Discard them and then chop up the pepper.

Put the tomatoes, cucumber, onion, and green pepper into the blender. Add the cilantro, olive oil, salt, and pepper. Put the top on the blender, and puree until smooth.

Taste a spoonful, and adjust the thickness and flavor with water, vinegar, and/or sugar. Puree briefly to combine the additional flavorings, if necessary.

Pour each serving into a bowl, and enjoy!
