  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 cloves of garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 1 tablespoon all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 slices of baguette
  • 1 cup grated Gruyere cheese


  1. In a large pot, melt the butter over medium heat. Add the onions and cook until golden brown and caramelized, about 30 minutes.

  2. Add the garlic and cook for an additional 2 minutes.

  3. Stir in the flour and cook for 1 minute.

  4. Pour in the red wine and cook for 5 minutes, until reduced by half.

  5. Add the beef broth, sugar, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

  6. Meanwhile, preheat the broiler. Place the baguette slices on a baking sheet and broil until toasted on both sides.

  7. Ladle the soup into four oven-safe bowls. Top each bowl with a slice of baguette and sprinkle with the grated Gruyere cheese.

  8. Place the bowls under the broiler for 2-3 minutes, until the cheese is melted and bubbly.
