  • 1 lb white fish fillets, cut into chunks
  • 2 cups fish or vegetable broth
  • 1 cup milk
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 cup corn kernels, fresh or frozen
  • 1 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion, minced garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

  2. Sprinkle the flour over the vegetables and stir to coat. Cook for an additional 2 minutes.

  3. Slowly pour in the fish or vegetable broth, stirring constantly to avoid lumps. Add the diced potatoes, corn, dried thyme, paprika, salt, and pepper. Bring the mixture to a simmer and cook for 10 minutes, or until the potatoes are tender.

  4. Gently add the fish chunks to the pot and cook for an additional 5 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Stir in the milk and heat for another 2-3 minutes, until heated through.

  6. Serve the fish chowder hot, garnished with fresh parsley.
