  • 1 turkey carcass
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 8 cups of water
  • Leftover turkey meat, shredded

Instructions

  1. Place the turkey carcass in a large pot. Add diced onion, carrots, celery, minced garlic, bay leaf, dried thyme, salt, and pepper.

  2. Pour in 8 cups of water. Bring to a boil, then reduce heat to low and let simmer for 2-3 hours, skimming off any foam that rises to the surface.

  3. Remove the turkey carcass from the pot and discard. Strain the soup through a fine-mesh sieve to remove any solids. Return the strained soup to the pot.

  4. Add the shredded leftover turkey meat to the soup. Simmer for an additional 15 minutes to heat through.

  5. Serve hot and enjoy!
