  • 1 cup yellow split peas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried marjoram
  • 4 cups vegetable broth
  • 2 cups water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the yellow split peas under cold water and drain.

  2. In a large pot, heat some oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook until the vegetables are softened, about 5 minutes.

  3. Add the minced garlic, bay leaf, dried thyme, and dried marjoram to the pot. Stir well to combine and cook for another 2 minutes.

  4. Add the yellow split peas, vegetable broth, and water to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until the split peas are tender.

  5. Remove the bay leaf from the pot. Use an immersion blender to partially blend the soup until it reaches your desired consistency. Alternatively, you can transfer half of the soup to a blender, blend until smooth, then return it to the pot.

  6. Season with salt and pepper to taste.

  7. Serve the Danish-style yellow split pea soup hot, garnished with fresh parsley.
