How To Make Crockpot White Chicken Chili

This Crockpot white chicken chili is creamy, hearty, and easy to make! It’s slow-cooked ’til flavorful and packed with various spices, beans, and cheese.

Serves:

Ingredients

  • 1lbchicken breasts,boneless, skinless
  • 29ozGreat Northern Beans,2 cans, rinsed and drained
  • 2cupschicken broth,low sodium
  • 1large yellow onion,diced
  • 8ozgreen chilies,mild diced
  • 15oztomatoes,petite diced, drained
  • 15ozcream-style corn
  • 2jalapeños,seeded and minced
  • 4garlic cloves,minced
  • 1tbspchicken bouillon
  • 2tspground cumin
  • 1tspchili powder
  • 1tspancho chili powder
  • 1tspsalt
  • ½tspsmoked paprika
  • ½tspdried oregano

For Blender Ingredients:

  • 14½ozGreat Northern Beans,rinsed and drained
  • 2tbspcornstarch
  • 4ozcream cheese,softened
  • ¼cupcilantro,loosely packed
  • ½cupsoup broth,removed from slow cooker after cooking

For Toppings:

  • cheese
  • sour cream
  • tomatoes
  • avocados
  • tortilla chips
  • cilantro
  • lime juice
  • hot sauce

Instructions

  1. Lightly spray slow cooker with non-stick cooking spray. Add chicken in an even layer followed by all remaining slow cooker ingredients.

  2. Give the top ingredients a stir to combine. Cook on Low for 6 to 8 hours or on High for 3 to 4 hours, or until chicken is tender enough to shred.

  3. Remove chicken to a cutting board, shred chicken and return chicken to slow cooker. Turn Slow Cooker to High if on Low.

  4. Add all Blender Ingredients to a blender, including ½ cup soup from slow cooker. Try to just scoop out broth.

  5. Blend until smooth. Add puree back to slow cooker and stir to combine. Cook on High for 30 minutes.

  6. Season soup with salt, pepper, and hot sauce to taste. Top individual servings with desired toppings. Serve and enjoy!
