Crockpot Veggie-Loaded Chicken Tortellini Soup Recipe

This crockpot chicken tortellini soup recipe is just bursting with flavor! It’s not as creamy as other rich soups but it’s just as flavorful. The veggies, pasta and chicken add some color and protein to this soup as well.

Ingredients

  • 1 lb boneless chicken breast
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 1 red pepper, diced
  • 2 potatoes, cubed
  • ¾ cup peas
  • 1 cup baby spinach
  • 2 cloves garlic, minced
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 bayleaf
  • 1 tsp red pepper flakes
  • 1 pinch salt, or more to taste
  • 1 pinch pepper, or more to taste
  • 2 cups cheese tortellini

Instructions

  1. Pour everything minus the tortellini into the crockpot.

  2. Cook it on a low heat for 5-6 hours. Take out the chicken and shred.

  3. Add the shredded chicken back into the crockpot with the tortellini.

  4. Cook for another 15 minutes and then serve warm!
