Grab a hearty bowl of this slow-cooked potato soup with tender carrots, ham, and a blend of spices cooked in chicken broth.

Ingredients

  • 7cupspotatoes,diced
  • 1medium onion,diced
  • 1large carrot,chopped
  • 2-3cupsham,diced
  • 2tspparsley
  • 1tspthyme leaves
  • pepper,to taste
  • 5cupsReady to Serve Chicken Broth
  • 1cup2% milk
  • ½cupsour cream
  • pepper,to taste

Instructions

  1. Add diced potatoes, onion, carrot, ham, thyme, parsley, pepper, and broth to a crockpot.

  2. Cook on Low 7 hours, or High 3 hours.

  3. Remove 2 to 3 cups of the potatoes/carrots and mash, then return the mashed mixture to the crockpot.

  4. Add milk and sour cream. Stir and cook for an additional 15 minutes. Add pepper to taste.
