- 4 large Vidalia onions, thinly sliced
- 2 tbsp butter
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Croutons, for serving (optional)
- Grated Gruyere cheese, for serving (optional)

In a large pot, melt the butter over medium heat. Add the sliced onions and cook until caramelized, about 20 minutes, stirring occasionally.
